Analisis Nitrit pada Jajanan Sosis Bakar Jalanan di Gowa: Pendekatan dengan Spektroskopi UV-Vis

Abstract

Nitrit merupakan salah satu bahan aditif yang sering digunakan dalam produk olahan daging seperti sosis, namun penggunaannya yang berlebihan dapat membahayakan kesehatan. Penelitian ini bertujuan untuk menganalisis kadar nitrit pada sosis bakar yang dijual di sepanjang Jalan Pattallassang, Kabupaten Gowa menggunakan metode spektroskopi serapan UV-Vis. Sebanyak tujuh sampel (A-G) diuji kualitatif menggunakan pereaksi asam sulfanilat dan N-1-naftiletilendiamonium diklorida. Dua sampel (C dan F) menunjukkan hasil positif ditandai dengan terbentuknya warna merah muda. Selanjutnya, sampel C dan F dianalisis secara kuantitatif menggunakan spektrofotometer UV-Vis pada panjang gelombang maksimum 540 nm. Hasil analisis menunjukkan kadar nitrit sebesar 0,0703 µg/g pada sampel C dan 0,0511 µg/g pada sampel F. Nilai ini masih berada di bawah batas maksimum yang ditetapkan oleh BPOM (30 µg/g).
